Ground Bison raised by Creamery Brook Bison in Brooklyn, Connecticut. Great for burgers, meatballs, and in any recipe that calls for ground meat. The meat is so lean, it can be hard to make a patty out of them. Either lightly oil, or wet your hands (with water) before forming the patties. Patties are best formed when the meat is very cold. They might fall apart if you cook them on a grill, a cast iron pan is ideal.
