Shiitakes - Spring Donkos

Spring Donkos are highly prized in Asian cooking. Naturally occurring in the spring and fall, when the days are warm and nights are cool, the shiitakes become slightly dehydrated and stressed out. White fissures form in the mushroom cap, as it dries and contracts, creating the "flower"look of the classic Donko. Shiitakes are much better cooked than raw.
