New England caught Halibut from City Fish Market in Hartford.
The word Halibut comes from the Middle English words "Haly" and "Butte" which translate to "Holy Flat Fish"- presumably because of it's popularity during Catholic holy days.
Halibut is a white fish that is most often poached, grilled or baked. It has a low fat/oil content and has a "clean fresh taste".
