Grassfed Bison

Bison is an extra lean meat, with what many describe as a "clean" flavor. I prefer to call it extra lean, and extra mild. Be careful not to over cook. Like all lean and grassfed meat, cook it "low and slow" And whatever you do - don't call it Buffalo meat. Bison are native to North America - Buffalo are not. Buffaloes, despite the song, have only roamed the range of Africa and Asia (the cape buffalo and the water buffalo). The song should have said "give me a home where the bison roam"...

Ground Bison (Clatter Ridge Farm)

Ground Bison raised by Creamery Brook Bison in Brooklyn, Connecticut. Great for burgers, meatballs, and in any recipe that calls for ground meat. The meat is so lean, it can be hard to make a patty out of them. Either lightly oil, or wet your hands (with water) before forming the patties. They might fall apart if you cook them on a grill, a cast iron pan is ideal.

Bison Tongue - grass fed (Clatter Ridge Farm)

Boil with garlic, onion, celery and carrot. Peel off thick membrane when done. Very lean and flavorful, makes a great taco filling, or slice thinly and fry until crisp.
